Pastry expert Louise Chouchard of Raids-Patisserie said I must go. If Louise said to jump off the Pont Neuf I'd probably do that too. Louisegave a talk at the Salon du Chocolat on the future of pastry in 2050 so the girl knows her stuff.

Back to gazing at Pichard's delights. Anyone know what 'chapelure' is? I think I want it.
